Bobotie
When you look at the ingredients, you're gonna think 'what is all this shit'. Check out the video though and you'll see it is easy as pishing into the wind on a motorcycle.
How long will it take? A while.
How much does it cost? Depends on whether you shop at Waitrose or Lidl.
You need:
-
1 cup of soya mince (not sure what soya mince is? Tough shit)/ or you can use a cup of lentils instead
-
1 cup of bulgar wheat (or buckwheat if you want gluten free)
-
1 cup red lentils
-
1 slice of bread in milk (yeah)
-
2 onions
-
2 garlic cloves
-
Some ginger
-
Teaspoon sugar
-
2 teaspoons general curry powder and a bit of chilli powder
-
Salt
-
2 Tablespoons Worcestershire sauce
-
Spoon of chutney
-
Spoon of apricot jam
-
Teaspoon of turmeric
-
Seedles raisins
-
Black pepper
-
Almond slivers for toasting
-
3 eggs
-
Dessicated coconut
-
Couple of bay leaves
Do it
OK - nothing to it.
Preheat oven to 180oC (Gas 4, 356oF).
Get the lentils, soya and bulgar on the go. 1 cup of lentil with tsp of salt in 400ml of water - bring to boil and then put on lowest heat, stirring regularly so it doesn't stick to pan until it's a bit like porridge. In the meantime, mix some veg stock with boiling water and cover the dried soya - leave it to soak for about 20 mins. Do the same with the bulgar wheat (if you are using buckwheat - use this if you are wheat intolerant - cover it with water and some salt, bring to boil and simmer for about 30 mins).
While that is on the go, chop up your 2 onions and garlic and ginger. Put a bit of oil in your pot and fry these until the onions begin to soften. Turn down the heat and add 2 healthy teaspoons of curry powder, bit of chilli powder. Let the fragrances develop for a couple of minutes then add big spoon of chutney, big spoon of apricot jam, the bread that's been soaking in the milk, 30ml worcestershire sauce, and a big handful of seedless raisins. Mix it all together. Now add the lentils, the soya mince and bulgar (or buckwheat) and give it all a damn good seeing to. Whisk an egg and add to the mixture . . . and give it what for again.
In a heated saucepan very lightly oiled, chuck in a handful of the almond bits and fry them gently - don't burn them. Then add them to the mixture and mix them in.
You're almost done. Spoon it all into a dish. Whisk the other two eggs and add tsp of turmeric powder and about 250ml milk and whisk. Pour this over the mixture. Sprinkle dessicated coconut and stab with 2 bay leaves. Cover.
OK, I know this is going to seem a bit fucking weird, but trust me - If you can, place the dish in another baking dish so you can add about an inch or two of water . . . . so it's a bit like a water bath. Why? Because it's frickin awesome, that's why . . . and when your friends see you doing it they'll be super impressed. The real reason is that this method provides a more even, slower heat source than the direct heat of an oven . . . and if you want to be as amazing as Dr Broccoli when it comes to making veggie food . . . as if you ever could.
Put it in the oven for an hour.
Tasty, delicious and nutritious.
