Thai noodles
Even Late my Kate can make this . . . and it tastes so genuine it's like it's been smuggled into the country in a Thai's armpit.

You need:

Some mushrooms ... or leave them out if you don't like them

Groundnut oil
-
Bunch of spring onions
-
Baby corn
-
Carrots
-
Broccoli, pak choi, mange tout ... any green stuff

2 garlic cloves
-
Lime leaves
-
Some ginger
-
Thai curry paste
-
Tin/s of coconut milk
-
Rice noodles (my preference .... but whichever noodles you fancy)

Soy sauce
-
Vegetable stock
Do it
Heat oil in pan - medium heat. Add sliced up spring onions, baby corn, garlic, lime leaves and fry for 5 mins. Chop up broccoli and other green stuff and add. Fry for another 5 mins. Add mushrooms. After 3 mins add about 2 TBSP of the Thai curry paste and after a minute or two add veggie stock. Bring that to the boil and then let that simmer for a while with the occasional stir. When you are ready to eat add the noodles. Depending on what type you have - some will cook very quickly in the mixture (about 3 mins), other may take a bit longer. Add soy sauce a little at a time and keep tasting till you have it just right.
I like to fry some eggs and serve the eggs on top of a good helping of the noodles.Heat
