Sakthi lemon rice powder

Radioactive Rice

 

If this is not the best rice you have ever tasted, then my bum's a brinjal. 

 

You need:

  1. 1 onion

  2. Some curry leaves chopped up 

  3. Basmati rice 

  4. Sakthi Lemon Rice powder 

  5. Vegetable/sunflower oil  

  6. Salt 

  7. A small piece of broccoli 

 
Do it

 

  1. I always make a minimum of 2 cups of rice at a time

  2. 2 cups of Basmati rice and cover with cold water. Leave to soak for about 15 mins

  3. Chop onion and curry leaves and piece of chopped broccoli (and a chilli if you want to add some heat) and add it to the oil. 

  4. Fry until softening. Turn down heat

  5. Add 2 Tsp of the lemon rice powder (1 if you are doing 1 cup of rice) and simmer for a couple of minutes.

  6. Rinse the rice well and add it to the frying spices. Mix it up well and fry for another couple of minutes.

  7. Add 2.5 cups of cold water (or 3 cups if you prefer sticky rice) and a Tsp of salt. Mix well.

  8. Bring it to the boil, cover and then low simmer, stirring periodically.

  9. It'll take around 6 mins. Don't overdo it otherwise it'll be like porridge. The time to turn it off is when there still seems to be moisture. Just fork it to separate the grains and leave it to stand without heat and let those flavours fuck with your mind.
